Today's delicious chicken taco recipe comes from Reannon Rose here at The Featherweight Shop! These tacos are the best of both worlds - dairy/grain free and great taste. Reannon is an avid health enthusiast, as well as a weight lifter. Loving all things health, she is purposeful in the kitchen making delectable meals that will sustain her body! Reannon is such a joy to work with, always finding a way to help those around her. She is hoping to fulfill Christian mission work someday in Africa! Go Reannon!

Ingredients:

Chicken Thighs

Carrots, thinly sliced

Purple Cabbage, shredded

Green Pepper, thinly sliced

Siete Foods Almond Flour Tortillas

Trader Joes Herbs de Provense Seasoning

Onion Salt Seasoning

Olive Oil

Salt

 

Instructions:

Chop chicken thighs into 1 inch cubes.

Cook in olive oil, herbs de provense, and salt.

In another pan saute peppers, cabbage, and carrots together with the onion salt and salt. Add a dash of water for added moisture. 

Cook the tortillas with a touch of olive oil on a flat pan to slightly crisp them.

Place chicken and vegetables on warm tortilla and enjoy!
